Fried Artichoke Hearts
Heat 2 cups of oil in a skillet to 350. Whisk together 2 eggs and ½ cup milk in a small bowl. Scoop out 1-2 cups seasoned bread crumbs into another bowl. Open a 15 oz. can of artichoke hearts and drain. Cut artichoke hearts in half. Dip in egg mixture and then drop into breadcrumbs, coating thoroughly. With heat-proof tongs or slotted spoon, drop artichokes into heated oil. I like to work in small batches. Fry about a minute and a half per side, or until golden brown. Drop onto a paper towel lined plate to cool. Serve with dip of choice-ranch is always quite delicious. Makes an easy and quick appetizer or a gluttonous Sunday night meal for one.
